When my mother made this dessert, I insisted with impatience to give me the glazing before the dessert being baked.
Since the brownie was one of our favorite desserts, my mother always baked twice as much for everyone. My grandmother used the jam made from the plums of our garden and my mother continued this tradition but you can also use other jams as preferred.
For the dough we need: 1 large jar of plum jam (800 g), 4 cups of flour, 200 gr of sugar (or even less for those preferring less sweet considering that the jam is also sweet), 3 cups of water (preferable mineral), 1 cup of oil, 2 sachets of baking powder, 3 tablespoons of cocoa (or more for those enjoying more cocoa)
Dough preparation: put in a bowl the flour, baking powder, sugar and cocoa and mixed them well. Add the water and stir the entire mixture with a whisk, mixing well until the sugar melts. Then gradually add the oil, continue the mixing with the whisk until the oil is fully incorporated. In the end, add the jam and mix it again. The composition is put into a pan covered in baking paper and put into the preheated oven (170 degrees). Decrease the fire to a medium flame and bake it for about 30 minutes. Check the dessert with a tooth pick if the dough is baked inside.
For glazing, the following ingredients are necessary: 6 tablespoons sugar, 4 tablespoons cocoa, 2 tablespoons oil, 6 tablespoons water.
Glazing preparation: Mix the sugar and the cocoa in a bowl. The bowl is put on the stove, add water and oil and leave the mixture to boil until the composition reaches the necessary consistency. The glazing is poured over the previously cooled cake. In the end, cut the cake into square pieces.
The resulted brownies have an extraordinary taste with the combined aromas of plumb jam and chocolate.
